I’m on the Big Island of Hawaii for a couple of days, visiting family and taking a much needed break from winter (a heavy burden, I know). I was stunned recently to see that even a favorite local establishment (whose main staples include ‘loco moco’ — rice, a hamburger patty, brown gravy, and two eggs on top — and Spam slices covered in sunny-side-up eggs) is now offering ‘vegetarian and vegan’ options. Thus corroborating this recent and welcome news from the WaPo.
Given the inexplicable (or maybe not) popularity of Hormel’s mystery meat here, an enterprising and forward-looking person in Hawaii should make a vegan spam equivalent.
